Lightly oil two 12 section mini muffin pans, or use non stick
In a bowl, mix together the turkey and feta.
In another bowl, whisk eggs until combined
Fill each muffin pan section with beaten egg about ¾ full
To each egg-filled section, add about a tablespoon of the turkey & feta mixture, pressing into the egg with the back of the spoon.
Bake in center of oven 20 minutes or until golden and center doesn't jiggle if you shake the pan.
Allow to cool and garnish with parsley. Serve with cranberry sauce for topping.
Notes
If you whisk your eggs in a large measuring cup, it will be easy to pour them into the muffin cups.These mini quiches can be made ahead and frozen in an airtight container for up to 3 months.These can be made ahead and stored in the fridge for up to two days before serving.
