2sheets of nori (toasted seaweed)dampened
4ozsmoked salmon
1cupcucumbercut into matchsticks
1avocadosliced
2scallionssliced
1teaspoonblack sesame seeds

Instructions
Wasabi Mayonnaise
In a small bowl, whisk together the mayonnaise, wasabi paste, and rice vinegar. Refrigerate until ready to use.
Bowls
Divide rice between two serving bowls
With your fingers, dampen nori with cold water, and cut into strips. Divide the nori between the two bowls.
Roll smoked salmon slices into cigar shapes and divide between the bowls
Top the bowls with avocado, cucumber slices and scallions.
Sprinkle each bowl with sesame seeds, and drizzle with wasabi mayonnaise
Serve with soy sauce on the side.
Notes
You can substitute any short-grained rice, such as arborio, for the sushi rice.Reduce the amount of wasabi paste if you want a milder sauce.If you can't find wasabi paste, sriracha is a delicious substitute. Use gluten-free soy sauce to make this gluten-free
