peanut butter

brown sugar

egg, beaten

vanilla extract

baking soda
Instructions
Preheat oven to 350° Line a baking sheet with parchment paper
In a bowl, combine all ingredients, mixing well
Scoop level tablespoons of the batter, rolling to form balls
Place balls 2' apart on prepared baking sheet
Flatten balls with the tines of a fork
Bake 8-10 minutes until the cookies are light golden brown
Allow cookies to cool on the pan 5 minutes before transferring to a rack
Notes
If you use natural, unsalted peanut butter, add 1/2 tsp of salt to the rest of the ingredients, if desired.
