Fresh Meals For Spring

When March arrives, it's like we can finally see the light at the end of winter. At least for those of us living in Canada, winters can be long, cold and dark. That's when we enjoy all of the comfort foods like hearty soups, stews, casseroles, and curries.

However, as it starts to warm up and the days start to get longer, it's time to refresh our meal routine to include lighter, fresher fare. That's why I'm partnering with Lilydale® to make these Turkey Tacos with Mango Salsa, using their Turkey Breast Strips from the freezer case.

Why Frozen Turkey Breast Strips?

These Turkey Breast Strips are uncooked and deliciously seasoned. You can find them in the freezer section and they take just twenty minutes to cook from frozen in the oven. Of course, you can't beat the convenience, and it's great to be able to use turkey in everyday meals without having to roast a whole one.

And, they're not only convenient, but really versatile for (besides tacos) using in salads, sandwiches, soups, and appetizers.

Tacos are always fun, and even more so when you put a twist on the ingredients. Like these ones with turkey & mango, two ingredients which pair beautifully together.

These tacos are a fresh and simple meal that the whole family will love. All that's needed is to chop and toss the salsa ingredients together while the turkey is in the oven, then assemble and devour.

Turkey tacos are also delicious with Roasted Chili Corn Salsa.

Turkey Tacos with Mango Salsa

Turkey Tacos with Mango Salsa

A fun and delicious twist on tacos using turkey breast strips and mango, two ingredients that taste delicious together.

Ingredients

  • 1 550 gram Lilydale® Turkey Breast Strips box
  • 6 corn tortillas
  • 1 mango chopped
  • 1 red bell pepper chopped
  • ⅓ cup red onion diced
  • 1 jalapeno diced
  • 1 lime juice of
  • 2 tablespoon cilantro chopped
  • lime wedges, for serving

Instructions

  • Preheat oven to 425°
  • Arrange frozen turkey breast strips on a baking sheet.
  • Cook 10 minutes, flip, then cook another 10 minutes
  • Warm tortillas, wrapped in foil, in the oven during the last 5 minutes
  • Toss together the mango, bell pepper, jalapeno, red onion, cilantro, and lime juice.
  • Remove turkey and tortillas from the oven
  • Assemble the tacos by dividing the salsa evenly over the tortillas, then the turkey strips.
  • Serve with lime wedges.

Notes

You can substitute small flour tortillas for the corn tortillas.
You can substitute parsley for the cilantro in the salsa.
If you can't find fresh mangos, frozen mango (thawed) works just as well.
Mango salsa can be made ahead and kept in the fridge for up to a week.

      These turkey tacos look so good. I don't know why, but I've never thought to make tacos with turkey! Only Chicken! I'll have to try this.maybe with some of the leftover turkey I currently have on the fridge!
