Flourless Peanut Butter Cookies

I used to make these Flourless Peanut Butter Cookies when my kids were little because they are just so simple, yet so delicious, and the kids loved them. A shortage of flour (flour?) in grocery stores recently, brought these cookies back to mind.

About Peanut Butter Cookies

Along with chocolate chip and oatmeal cookies, peanut butter cookies are a classic cookie recipe. one that’s been passed down from grandmas to moms, and enjoyed by all kids everywhere. The peanut butter cookie became a favourite in the early 1900s when peanut production was being promoted in the United States. Peanut butter cookies were one of the many recipes created to use the peanut crop. 

And of course, something as delicious as a peanut butter cookie was a hit and has withstood the test of time, deserving of classic status.

How do Flourless Cookies Taste

Although there are many versions of the recipe for peanut butter cookies without flour, both in cookbooks and online, they are all pretty similar. The basic recipe is simply peanut butter, sugar and egg, and it just works.

The result is perfectly crisp on the outside, tender on the inside, peanut flavour packed, delicious cookies. If you bake these, they will disappear fast, guaranteed.

Why Are These Cookies Flourless?

Besides being simple, and delicious, these flourless peanut butter cookies have no flour, of course, but also no butter, making them gluten and dairy-free. And I love it making sure that everyone is included in the treats.

I always buy and use all-natural peanut butter. The ingredient list is just peanuts on my favourite brands. However, you can use any peanut butter. Use what you have on hand, or use your favourite brand. Any of them will work for this recipe.

Can I Freeze Them?

Yes, you can freeze these cookies. The best way: individually freeze the cooled cookies on a parchment-lined baking sheet. When they are frozen, pack them into freezer bags or containers. To defrost, remove the cookies from the freezer bags or container that you froze them in, and allow them to thaw on a paper towel-lined plate. If you defrost them in the freezer container the cookies will end up soggy from condensation.

Are These Cookies Gluten-Free?

Yes, these cookies are flourless, and so they are gluten-free. In addition, because there is no butter in the recipe these are dairy-free as well. The peanut butter supplies all the fat. However, these cookies are in no way lacking. Everyone will love them, I promise.

Flourless Peanut Butter Cookies

Flourless Peanut Butter Cookies use just 5 ingredients, and one bowl. These gluten and dairy-free cookies are crisp on the outside and tender on the inside.

  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 egg, beaten large
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda


  • Preheat oven to 350° Line a baking sheet with parchment paper
  • In a bowl, combine all ingredients, mixing well
  • Scoop level tablespoons of the batter, rolling to form balls
  • Place balls 2' apart on prepared baking sheet
  • Flatten balls with the tines of a fork
  • Bake 8-10 minutes until the cookies are light golden brown
  • Allow cookies to cool on the pan 5 minutes before transferring to a rack


If you use natural, unsalted peanut butter, add 1/2 tsp of salt to the rest of the ingredients, if desired.
